Slow Food Scotland began with the formation of the Edinburgh convivium in 2001, as part of Slow Food in the UK. Growing interest around the country led to the formation of an independant Slow Food Scotland, becoming a registered charity in 2014, and continuing to work closely with the other UK nations. Globally working towards the rights to good, clean and fair food for all, Scotland's biggest success lies in our extensive and growing Ark of Taste, highlighting the wealth of fabulous produce the counrty has to offer, as well as our passionate cooks and vollunteers.

Treasurer
Treasurer for SFS and Slow Food in the UK Director for Scotland. Walter is a long term supporter of the Slow Food values, particularly interested in the impact of good food on health and grows own vegetables in an allotment.

Secretary
A foraging consultant an instructor based in central Scotland, Amy holds a BSc in food science, an MSc in gastronomy and is currently working towards a PhD in food, media and communication. In 2023 she took part in the wild biome project, eating only wild food for a period of three months to measure the resulting health effects on the gut microbiome. Involved with Slow Food Scotland for over ten years, sustainability, enviroment and culture is at the heart of her foraging practice.

Jill has a background in communications, working in PR and marketing in the hospitality industry in the past, where she became aware of the Slow Food movement. She has been a member of Slow Food Edinburgh since 2019, and joined the board of Slow Food Scotland in 2023. As well as working in Events Management for Fife Council, Jill also freelances as a proofreader, editor, and copy writer, and writes the occasional piece for some food and drink publications. She loves growing her own food in her garden in Dunfermline, and is passionate about supporting local, independent food producers.
