Ark of Taste

The Ark of Taste is a global biodiversity project that seeks to protect traditional foodstuffs that are at risk. In Scotland the ark is spearheaded by Wendy Barrie, who has onboarded 50 foods to date. From traditional black pudding to butteries, Mussleburgh leek to Prestonfield rhubarb, soay mutton to Barra snails, our food traditions and culture are celebrated.
